Why Sweetener Density Varies So Much

Sweeteners have some of the largest density differences of any ingredient category. Compare powdered sugar at 120g per cup to honey at 340g per cup — nearly three times heavier in the same volume. This is why using a kitchen scale matters most for sweeteners.

Liquid Sweeteners vs Dry Sweeteners

Liquid sweeteners (honey, maple syrup, molasses, corn syrup, agave) are significantly denser than water because of their high sugar content. 1 cup of honey weighs 340g versus 237g for water — that's 43% more weight for the same volume.

Dry sweeteners (granulated sugar, brown sugar, powdered sugar) are lighter per cup because they contain air pockets between the crystals. Brown sugar is heavier than granulated because packing removes more of those air pockets.

Substituting Sweeteners

When substituting liquid sweeteners for granulated sugar, you typically use less by volume (honey is sweeter and adds moisture). Our converters show gram weights, which makes cross-sweetener substitutions much easier to calculate accurately.
