How to Measure Brown Sugar in Cups
Brown sugar is always measured packed unless a recipe explicitly says otherwise. To pack brown sugar, fill the measuring cup and press it firmly with your fingers or the back of a spoon until it's compact. When inverted, it should hold the shape of the cup — a packed cup weighs 220 grams.
Loosely spooned brown sugar (not packed) weighs only about 195 grams per cup — a 25g difference that can affect the moisture, color, and sweetness of your baked goods. Use the calculator above to select your preferred measurement method.
Pro tip: If your brown sugar has hardened, place a slice of bread or a damp paper towel in the container and seal it overnight. The sugar will absorb the moisture and become soft enough to pack properly.
