Pan Substitution Tips
- Match areas for the same batter depth (affects baking time most)
- Dark pans absorb more heat — reduce oven temp by 25°F and check early
- Glass pans retain heat longer — reduce oven temp by 25°F
- Fill pans no more than ⅔ full to allow for rising
