Fresh:Active Dry:Instant = 3:1.2:1. Active dry yeast needs to be proofed in warm water first; instant yeast can be added directly to dry ingredients.
Types of Yeast Explained
Instant Yeast (also called Fast-Action or Rapid-Rise)
The most convenient type. Fine particles that hydrate quickly. Can be added directly to dry ingredients without proofing. Works slightly faster than active dry yeast.
Active Dry Yeast
Larger granules that should be proofed in warm water (40–45°C / 105–115°F) with a pinch of sugar for 5–10 minutes before use. Slightly less potent than instant yeast, so use 20% more.
Fresh Yeast (Compressed Yeast / Cake Yeast)
Moist blocks with the most intense flavor. Highly perishable (2 weeks refrigerated). Must be dissolved in liquid before use. Popular with professional bakers and in European recipes. Use 3× the weight of instant yeast.
